There are two ways to evolve an Eevee.

The first, as we see with most types, is to use an Evolution Stone that corresponds to the type of evolution you want.

The second applies to Espeons and Umbreons. Eevees evolve into these two when they feel a certain amount of happiness--Espeon if during the day, and Umbreon if at night.
